
Some people dream about Thanksgiving dinner all year. The turkey, the stuffing, the mashed potatoes and gravy, the cranberry relish and the pumpkin pie is the ultimate gastronomical dream for them.
Not me. I look at Thanksgiving dinner as the precursor to MY most favorite meal of the year – Turkey Tetrazzini. While most people will try this recipe with turkey dinner leftovers, I love it so much that I have been known to make my husband cook a turkey in the middle of July just so I could make this dish.
So when you are looking to use those turkey leftovers this year, give this recipe a try and see if it doesn’t become your favorite annual holiday meal as well.
Turkey Tetrazzini
1 cup Turkey Meat
½ lb. Mushrooms – Sliced
6 Tbsp. Butter
½ lb. Spaghetti – cooked
3 Tbsp. Flour
2 cups Chicken Broth
1 cup Heavy Cream
2 Tbsp. Sherry
Parmesan Cheese
Preheat oven to 375°
Combine sliced mushrooms with 3 Tbsp. butter in saucepan and sauté until tender – set aside.
In separate pan, melt remaining butter with flour. Whisk in chicken broth and simmer until thickened. Add cream, sherry and reserved mushrooms.
Combine ½ of sauce with cooked spaghetti in a baking dish. Add turkey and remaining sauce and combine.
Sprinkle Parmesan cheese on top of dish, bake uncovered for 45 minutes.
Of course, you may want to make this recipe all your own by incorporating other Thanksgiving leftovers. Try it with ham, a little bit of leftover stuffing toasted on top, or toss in some green bean casserole. Whatever leftovers you have left over you’ll love enjoying more than just your typical post-Thanksgiving turkey sandwich!
